Feelin’ hot, hot, hot…

Well, this is a change! I had gotten so used to my part of the country being classified as zone 5 (5a or 5b, depending on exactly where you live). Now, it seems we’ve “graduated” to zone 6a.

I must admit that I’m not feeling very celebratory about this change. Sure, a longer growing season is terrific, but not when we’re faced with the reason why the temperature keeps ticking up…

Recipe: Leftover-Soup Fritters

Ok, so it may not sound all that appealing, but stay with me.

Soup is lovely, but sometimes we make too much, and consuming the leftovers is tiresome. So, I “reinvented” my leftover soup as fritters, and was pretty happy with the result. My soup was creamy potato and broccoli, so it was already pretty well blended. If you’re thinking of trying this with a chunkier soup (like minestrone) I would recommend first blending the soup in a blender or food processor.

Ingredients:
2 cups of blended soup
2 cups cooked rice (or quinoa, or couscous)
1/2 cup flour (gluten-free flour works, too)
1/2 tsp baking soda
Ghee or olive oil
Salt and pepper to taste

Directions:
Mix soup and rice in a bowl. Sprinkle in the flour and baking soda and stir until evenly blended.

Heat ghee/oil in a skillet over medium heat.

Place spoon-size dollops of batter into the skillet and cook until light brown.

Flip and cook on the other side. Sprinkle with salt and pepper.

Transfer onto paper towels (or whatever you prefer to use to soak up grease). It’s best to eat them when they’re still warm.

Denver Green Streets Event

The positive, uplifting and entertaining documentary “Fresh: The Movie” will be shown at The Garden restaurant at 3435 Albion Street in Park Hill.  It will be a fun and tasty event!

The evening’s  guest speaker is Sundari Kraft, author of “The Complete Idiot’s Guide To Urban Homesteading”.  Sundari also runs Heirloom Gardens and Eat Where You Live.  She has an apprentice program that teaches people to grow food and even start a CSA; you work as you learn.

Admission is Free, and tasty treats at The Garden will be priced even more affordably than usual.  Aleece Raw of The Garden wanted to start a restaurant to feed people healthy and affordable food, and we’re excited to join her in the move toward healthier eating that’s accesible to more people.
