I feel that cooking is one of the most nourishing (and necessary) things I can do during my day. While busy schedules may affect how much and how often we're able to cook, having the confidence to create healthy meals for yourself, your friends, and your family is a valuable skill.

In addition to being enjoyable, cooking is an integral part of the local food movement. Michael Pollan wrote a wonderful article on this for the New York Times.
